Cheesy Corn Casserole
I’ve been on a nostalgia kick all month and cooking up memories from my childhood. This month’s recipe is an easy-peasy side dish I grew up on as a child. I make it now for my grandchildren and they love it almost as much as I do!Cheesy Corn Casserole
Ingredients:
2 eggs
1 cup sour cream
1 can creamed corn (12-14 oz)
1 can whole kernel corn (12-14 oz) - drained
1 teaspoon salt
1 package Jiffy corn muffin mix
½ cup melted butter
¾ cup shredded cheddar cheese – divided
Directions:
Pre-heat oven to 350 degrees and lightly butter a 9x9 pan
In a large bowl, add eggs and whisk until egg yolk is well broken
Add sour cream, both cans of corn and salt, stir to combine with egg
Add corn muffin mix and melted butter, stir well.
Fold in ½ cup of the cheese. Pour into baking dish and top with remaining cheese.
Bake for 45 minutes until top is golden brown
Let set for 10 minutes before serving.
This dish is even better warmed over the second day ... assuming there’s any left.
